Yes, sweet potato leaves are edible. The vines of sweet potatoes as known as camote tops in Spanish-speaking countries. Camote tops are rich in flavor, and packed with Vitamin A and C, calcium, magnessium, as well as an excellent source of antioxidants. Boil the sweet potato leaves until they are tender, then splash with soy sauce or vinegar and a dash of salt.
