Speck from Alto Adige IGP CASA RINALDI (Italy)
A fantastic product, Speck is the most celebrated speciality of the Tyrol. It is made to strict traditional methods - "a little salt, a little smoke and a lot of fresh air". Cured with a light crust of salt flavoured with pepper, juniper, rosemary and bay, the ham is then exposed alternately to mild smoking and drying. Authentic speck Alto Adige PGI can be made only with lean, firm pork thighs from renowned farms.
It is fabulous eaten simply sliced as antipasti, or use it in cooking in much the same way as you might use bacon. There may be slight variation of +/-10% in product weight as it is prepared and cut by hand.
