Roncofreddo's Pecorino (Italy)
Roncofreddo's pecorino hay is a cheese made based on sheep's milk, left to refine in the hay in such a way as to acquire the product of the particular vegetal notes. The brown outer crust, is wrinkled and compact, as equally compact and fine is also the inner pale yellow paste. tasting the taste is sweet and aromatic. They perceive the fragrance notes hay mixed with the aroma of sheep's milk. There may be slight variation of +/-10% in product weight as it is prepared and cut by hand.
