Pork picnic cut is the meat from the flanks between the trotter and the shoulder. Because this piece of meat locates at the bottom side of the hog, in Chinese culture it is commonly known as "Can't-See-Sky". The meat is soft and lean, with a thicker layer of muscle fiber and fascia, but the fresh flavor is much richer. It can be cut into shredded meat, sliced meat, diced meat or minced meat; suitable for saucing, making stew, braising, and steaming. The weight of the product may vary by +/- 10%.
