Spinach, Bell Pepper, Feta Frittata

Enjoy the eggy goodness with this meatless frittata enriched with savoury feta cheese.

Ingredients:

  • 2 Tbsp Olive Oil
  • Pinches of Salt and Pepper, to taste

  • 5 Eggs
  • ⅔ cup Baby Spinach
  • ¼ cup Crumbled Feta Cheese
  • 1 tsp Fresh Oregano
  • ½ Red Bell Pepper, sliced

Cooking Directions
  1. In a large bowl, whisk together the eggs and season with salt and pepper.
  2. Fold in the oregano and the cheese. Set aside.
  3. In a pan, warm the oil over medium heat. Add the bell pepper and cook until tender, about 5-8 mins.Then add the spinach and cook until wilted, about 2 mins.
  4. Add in the egg mixture. Cover the pan with a lid and let the frittata cook until the edges are golden brown and the center is no longer runny, about 6-8 mins.
  5. Garnish with extra oregano and cheese. Let the frittata rest for 5 mins before serving.
