Shrimp Scampi

A garlic buttery shrimp scampi with the sweetness of white wine and tangy lemon!
Recipe by: Jeffrey, Jou Sun user since 2016
Servings: 4   |   Time: 1 hr   |   Difficulty: Easy
From Your Kitchen
  • 3 Tbsp Olive Oil, separated
  • 1 tsp Salt
  • 1 Tbsp Fresh Lemon Juice
  • ¼ cup Unsalted Butter
  • ¼ cup Dry White Wine
From Jou Sun
  • 450g Shrimp, deveined
  • 4 Garlic Cloves, thinly sliced
  • ¼ tsp Red Pepper Flakes
  • 3 Tbsp Fresh Parsley, chopped
  • 1 Monge Baguette, for serving

Cooking Directions
  1. Whisk together grated garlic, salt, and 1 Tbsp. oil in a medium bowl. Add shrimp, toss to coat. Put in fridge to marinade for at least 30 mins and up to 1 hr.
  2. In a skillet, heat the remaining 2 Tbsp. oil over medium heat. Cook shrimp mixture until shrimp is pink but still slightly underdone, about 1 min per side. Transfer to a plate and leave as much oil in pan as possible.
  3. Add sliced garlic and red pepper to skillet and cook, tossing, until fragrant, about 1 min. Add wine and lemon juice and cook until reduced by half, about 2 mins.
  4. Add butter until melted and sauce is thickened, about 5 mins.
  5. Scrape shrimp along with all the juices into skillet. Toss to coat and cook until shrimp are fully cooked through, about 2 mins.
  6. Top with parsley, and serve with bread for dipping.
