Paper Baked Lemon Salmon w/ Potatoes & Honey

Baking the salmon with parchment paper is the perfect mess-free way of cooking, while the parchment paper helps preserve moisture of the salmon which makes it juicer and more tender.

  • ¼ cup Olive Oil
  • 3 Tbsp Honey
  • Salt And Pepper, to taste

  • 4 160-200g Salmon Fillets
  • 2 Garlic Cloves, minced
  • 2 Lemons
  • 1 Tbsp Fresh Dill, chopped
  • 2 tsp Smoked Paprika
  • 2 Small Potatoes, thinly sliced

Cooking Directions
  1. Preheat the oven to 400°F (200°C). Fold 4 large pieces of parchment paper (15 x 16 inches) in half. Open and lay flat.
  2. In a small bowl, mix together the olive oil, garlic, juice of 1 lemon, dill, smoked paprika, honey and a pinch of salt and pepper.
  3. On the parchment paper, layer the potatoes, and season with salt and pepper.
  4. Place the salmon over the potatoes and drizzle with the sauce, and top with 2 lemons slices. Repeat with the remaining ingredients.
  5. To close, fold the parchment over salmon, seal the open sides and make a packet. Transfer to the oven and bake until tender, about 18-20 mins.
