Pan Seared M7 Australian Wagyu

  • ½ Teaspoon salt
  • Black pepper, to taste
  • Oil
  • 60ml Red wine
  • 20g Butter

  • 300g M7 Australian Wagyu Sirloin
  • 1-2 Garlic
  • 2-3 Bunches rosemary
  • 50g Pearl onions
  • Lotus root, as desired

Cooking Directions
  1. Chop off the top 1.5cm of the garlic, with skin on; slice lotus root into slices; peel pearl onions
  2. Heat pan with medium heat, add a small glug of oil, and fry lotus root slices until golden brown. Remove onto kitchen paper and put aside.
  3. Absorb excess moisture on the surface of the steak with kitchen paper, then season the steak with salt and pepper.
  4. Heat pan with medium heat, add two tablespoons of oil, add garlic and onions (place garlic chopped side-down). Place steak and rosemary into pan. Fry the steak for 1-1.5 minutes on one side (for medium to well-done). Turn garlic and onions frequently.
  5. Flip the steak, add butter, and fry the steak for 1-1.5 minutes on one side (for medium to well-done).
  6. Rest the steak for 5 minutes before cutting, save the juices from the steak.
  7. Pour the steak juice back into the pan, add wine and reduce into a sauce.
  8. Plate up your steak, garlic and onions, then place lotus root slices on top, decorate with rosemary, and pour sauce.
