
Lamb, Feta Kofta Salad
Lamb kofta with a savory twist from feta cheese. Sided with a minty and creamy green salad to balance out the meaty bites.

- 2 Tbsp Olive Oil
- Salt And Pepper, to taste
- ⅓ cup Yogurt
- 1 cup Breadcrumbs

- 600g Lamb Mince
- ½ cup Fresh Parsley, chopped
- 1 tsp Coriander Powder
- 1 tsp Cumin Powder
- 300g Feta Cheese, crumbled
- 1 Purple Onion, sliced
- 300g Salad Veggies Mix
- 2 Tbsp Fresh Mint Leaves, chopped
- 100g Cherry Tomatoes, halved
- 1 Lime
Cooking Directions
- In a small bowl, combine the mince, breadcrumbs, parsley, cumin, coriander and 200g crumbled feta. Season with salt and pepper. Roll a tablespoonfuls of the mince mixture into balls and flatten slightly.
- Heat 2 Tbsp of olive oil over medium-high heat. Cook the kofta, turning occasionally, for 5 mins or until cooked through.
- In another bowl, mix together the yogurt and mint. Serve the mint yogurt sauce with kofta, salad veggies mix, purple onion, cherry tomatoes and the remaining feta cheese.
