Lamb, Feta Kofta Salad

Lamb kofta with a savory twist from feta cheese. Sided with a minty and creamy green salad to balance out the meaty bites.

  • 2 Tbsp Olive Oil
  • Salt And Pepper, to taste
  • ⅓ cup Yogurt
  • 1 cup Breadcrumbs

  • 600g Lamb Mince
  • ½ cup Fresh Parsley, chopped
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 300g Feta Cheese, crumbled
  • 1 Purple Onion, sliced
  • 300g Salad Veggies Mix
  • 2 Tbsp Fresh Mint Leaves, chopped
  • 100g Cherry Tomatoes, halved
  • 1 Lime


Cooking Directions
  1. In a small bowl, combine the mince, breadcrumbs, parsley, cumin, coriander and 200g crumbled feta. Season with salt and pepper. Roll a tablespoonfuls of the mince mixture into balls and flatten slightly.
  2. Heat 2 Tbsp of olive oil over medium-high heat. Cook the kofta, turning occasionally, for 5 mins or until cooked through.
  3. In another bowl, mix together the yogurt and mint. Serve the mint yogurt sauce with kofta, salad veggies mix, purple onion, cherry tomatoes and the remaining feta cheese.
