Grilled Lemony Salmon Skewer w/ Garlic and Dijon

From Your Kitchen
  • 2 Tbsp Olive Oil
  • ½ tsp Salt
  • ⅛ tsp Black Pepper
  • Metal or bamboo Skewer

  • 1.5 lbs Salmon Fillets, cubed
  • 2 Garlic Cloves, pressed
  • 2 Lemons, thinly sliced
  • 2 Tbsp Fresh Parsley, chopped
  • ½ Tbsp Dijon Mustard
  • Juice of ½ Lemon


Cooking Directions
  1. In a medium bowl, stir together chopped parsley, garlic cloves, dijon, salt, pepper, olive oil and lemon juice.
  2. Double skewer the salmon and lemon slices folded in half intermittently onto two skewers at a time. (If using bamboo skewer, soak in water for a while to prevent burning.)
  3. Brush both sides with the marinade.
  4. In a preheat griddle pan, grill the salmon skewers for 3-4 mins per side until cooked through over medium high heat.
